Jalapeno Simple Syrup:
Making your own simple syrup is one of the secrets to making your drinks at home taste as good as the ones from your favorite cocktail bar. If you’ve never made simple syrup before, you’re going to be shocked (shocked I tell you!) when you find out how easy it is. Equal parts granulated sugar and water are simmered until the sugar dissolves into the water. That’s it!
Once you have that basic ratio down, you can also add flavorings to the syrup. Citrus zest adds amazing flavor (as in this orange simple syrup), but since my favorite cocktail is a jalapeno margarita, my choice here was only natural. The simple addition of a few jalapenos to the simmering simple syrup was the key to being able to make the ultimate jalapeno margarita at home.
The Ingredients:
Equal parts granulated sugar, water and a few jalapenos are all you need. You can take out the seeds and ribs from the jalapenos if you like, or keep them in for a little more heat. Speaking of heat, the jalapeno simple syrup won’t be insanely spicy, just enough to feel it a little in the back of your throat.
The Preparation:
After you simmer the sugar, water and jalapenos for 10 minutes or so, turn off the heat and let the jalapenos infuse the syrup as it cools. Next you’ll strain your jalapeno simple syrup into a mason jar or other lidded container. (I use mason jars a lot – I know!)
Since I like to make other flavors of simple syrup too, I always make sure to label the jar. Although even if you didn’t label it, it would be pretty obvious once you smelled the delicious aroma of the syrup that it’s jalapeno!
The Payoff:
I may be a little obsessed, but I always have a jar of jalapeno simple syrup in the fridge! It keeps forever and it’s the perfect addition to a batch of jalapeno lime margaritas, or maybe the ultimate jalapeno margarita…. decisions, decisions.
I also like to make a refreshing homemade jalapeno soda with it! Just add a 1/4 cup of jalapeno simple syrup to a tall glass filled with ice. Then top it with club soda – so good!

Jalapeno Simple Syrup

Jalapeno simple syrup is the key to amazing margaritas! Jalapenos, sugar and water turn into simple syrup that’s sweet with a little heat. This recipe is easily doubled and lasts in the refrigerator for at least a few months.
Ingredients
- 1 cup of water
- 1 cup of sugar
- 3 fresh jalapenos, halved
Instructions
- Place the water and sugar in a saucepan over medium heat.
- The sugar will quickly melt into the water creating your simple syrup.
- Add the jalapeno halves and simmer on low for 5-10 minutes until the jalapenos turn from a bright green to a khaki color. Turn off the heat and let the syrup cool in the pan for 15 minutes.
- Strain the syrup into a labeled glass jar and refrigerate until cold.
