Bacon Artichoke Bundles

Description

Bacon Artichoke Bundles are a perfect three ingredient appetizer! Smoky bacon wrapped around tangy artichokes with brown mustard – all in a one bite bundle. So easy and so good!


Ingredients

  • 1 can of artichoke bottoms, quartered, or 1 jar of marinated artichokes – or both!
  • 1/2 pound of sliced bacon, slices cut in half
  • 23 tablespoons of spicy brown mustard

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silpat liner.
  2. If using artichoke bottoms, cut them into quarters. If using marinated artichokes, remove any tough or large leaves.
  3. Cut the bacon slices in half.
  4. Spread the bacon with spicy brown mustard, then add a piece or two of artichoke to the end of the bacon slice and roll it up. Secure with a toothpick.
  5. Place the rolled bacon artichoke bundles on your baking sheet and bake for 20-25 minutes until the bacon is done and slightly crispy.
  6. Drain on paper towels, then arrange on your serving platter. Try not to eat them all yourself!

Notes

– You could use Dijon instead of brown mustard.
– You can substitute whole water chestnuts for the artichoke hearts.
