Description
Bacon Artichoke Bundles are a perfect three ingredient appetizer! Smoky bacon wrapped around tangy artichokes with brown mustard – all in a one bite bundle. So easy and so good!

- 1 can of artichoke bottoms, quartered, or 1 jar of marinated artichokes – or both!
- 1/2 pound of sliced bacon, slices cut in half
- 2–3 tablespoons of spicy brown mustard
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silpat liner.
- If using artichoke bottoms, cut them into quarters. If using marinated artichokes, remove any tough or large leaves.
- Cut the bacon slices in half.
- Spread the bacon with spicy brown mustard, then add a piece or two of artichoke to the end of the bacon slice and roll it up. Secure with a toothpick.
- Place the rolled bacon artichoke bundles on your baking sheet and bake for 20-25 minutes until the bacon is done and slightly crispy.
- Drain on paper towels, then arrange on your serving platter. Try not to eat them all yourself!
Notes
– You could use Dijon instead of brown mustard.
– You can substitute whole water chestnuts for the artichoke hearts.
