It’s what you do with the coffee that makes the drink special. You’ll freeze the coffee into large “coffee cubes”, and then pour the Bailey’s over the cube! The coffee cube pairs beautifully with all these flavors, the flavor is very much like a grown-up iced mocha!
The Preparation:
I like to use a large cube tray for the coffee cubes for two reasons. First, the large coffee cubes will melt slowly into the Bailey’s and create the best sipping drink. Second, the cubes look beautiful! The contrast between the caramel color of the Bailey’s and the darker coffee color of the cubes make a very pretty drink.
Next you’ll pour the chilled, brewed coffee (I make the coffee extra strong) into the silicon ice cube tray and freeze overnight. The cubes are easy to get out of the molds too. If you run the bottom of the mold under warm water, then give the tray a little twist, and you should be able to pop the cubes out by pressing on the bottom of the mold.

Ingredients
- 2 – 3 cups of brewed coffee, chilled, then frozen in a large cube silicon ice cube tray
- 1/2 cup of Bailey’s Irish Cream for each drink
Instructions
- Pour the chilled coffee into your large ice cube tray and freeze overnight.
- Place one large cube in each glass and pour approximately 1/2 cup of Bailey’s on top. You want the Bailey’s to go about half way up the coffee cube. Serve immediately and savor the drink as the coffee cube melts!
Notes
Store the leftover coffee cubes in the freezer for 3-6 months. They’re also great for regular iced coffees and smoothies!
