Description
A flavorful side dish that you can have ready in 15 minutes!
Ingredients
Scale
- 1 cup of jasmine, basmati or other long grain white rice
- 2 cups of water
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
- zest from 1 lime, chopped (about 1/2 teaspoon)
- juice from 1 lime (about 2 tablespoons)
- 1/2 cup of chopped cilantro
Instructions
- Bring the rice and water to a boil in a saucepan. Once the water boils, reduce the heat to low and cover. Simmer covered for 15 minutes, or until the water is absorbed.
- While the rice is cooking, zest and juice your lime and chop the cilantro.
- When the rice is cooked, add the salt, pepper, lime zest, juice and cilantro to the saucepan. Combine and fluff with a fork. Adjust the seasoning to your liking, then eat!
Notes
This recipe is easily doubled. You can also make this with brown rice, but your cooking time will increase to 45 minutes.
