Curried Egg Salad is a fun take on a classic. Protein packed and perfect for a lunch gathering. Serve it in a sandwich, or on top of lettuce or crackers!
The Idea:
Much as I love classic egg salad, I really love this curried egg salad. It’s got all the elements of the classic, with a few extra flavorful ingredients added in for good measure – scallions, golden raisins, and curry powder! This salad is perfect to serve when you’re having company for lunch, or as part of a brunch buffet. It’s familiar, but with an extra zing everyone will love.
The Ingredients:
It’s true, I kind of have a thing for eggs. (See my multiple egg dish posts, like the amazing Avocado Egg Toast, or Sausage and Potato Frittata!) Eggs are so quick and easy and have great protein. As long as you enjoy them in moderation, they can be a healthy and delicious part of your menu planning. For this curried egg salad, you’ll make the hard boiled eggs ahead of time. Once they’re cold you can gather the rest of the ingredients, including the star of the show, the curry powder. The curry flavor in this dish is mild, just a note of the curry powder’s complex mix of spices. The curry flavor really enhances the eggs, you’ll be pleasantly surprised if you’ve never tried it before!
The Preparation:
It’s a good idea to separate the yolks from the egg whites when you’re prepping hard boiled eggs for egg salad. This way you can mash and combine the yolks, mayo and curry powder together evenly. If you do this, your finished egg salad will have a much better consistency and no big chunks of yolk. Unless you like that! Then just throw everything in together. Either way, you’ll add the chopped egg whites, sliced scallions and chopped golden raisins to the yolk mixture and fold to combine. That’s it!
I like to use lettuce cups to serve this egg salad so the curry flavors really stand out. It’s also a nice touch to sprinkle chopped, roasted cashews on top! That being said, this does make a great sandwich filling with a thinner, soft bread. You don’t want to use a crusty bread for this kind of sandwich because the egg salad will squish out as you’re trying to eat! Which is annoying and may lead to extra laundry or dry cleaning bills.
Curried egg salad is also really good on crackers, and even makes a fun appetizer!

Ingredients
- 6 hard boiled eggs
- 4 tablespoons of mayonnaise
- 3/4 teaspoon curry powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1/4 cup sliced scallions (green onions)
- 1/4 cup golden raisins, chopped
- 1/4 cup chopped cashews (optional)
Instructions
- Peel the hard boiled eggs, then separate your egg yolks and whites. Chop the whites and set aside.
- Add the egg yolks, mayo, curry powder, salt and pepper to a mixing bowl, mash and stir to combine until fairly smooth.
- Add the chopped egg whites, scallions and golden raisins and fold to combine.
- Serve on lettuce cups, on crackers, with sliced cucumbers or in a sandwich. You can sprinkle the chopped cashews on top if you like!
