Roasting garlic is a piece of cake. Something magical happens in the oven that turns the pungent garlic cloves into a smooth and buttery consistency. And, if you add it to mashed potatoes, it takes them over the top. It’s also great as an appetizer, you can spread it on bread just like butter! Start by cutting the top quarter off of a head of garlic.
Next take a square of tin foil, shape into a little bowl with your hands, then add olive oil and put the cut side of the head of garlic down into the olive oil. Scrunch the tin foil up like a little garlic present and put in the oven for 45 minutes. That’s it!
Let the garlic rest in the tin foil and cool down before you open it. Now you have delicious, perfectly roasted garlic to use in a recipe or as a spread, or squeeze directly into your mouth. But, really, however tempting, don’t do that.

Instructions
- Preheat the oven to 350 degrees.
- Cut the top quarter off of a head of garlic.
- Take a square of tin foil, shape into a little bowl with your hands, then add the olive oil and put the cut side of the head of garlic down into the olive oil.
- Scrunch the tin foil up like a little garlic present and put in the oven for 45 minutes. You can put it right on the oven rack.
- Let the garlic sit in the tin foil for at least 15 minutes to cool down before use.
