Ingredients
Scale
- 3 cups of cherubs/cherry or other small tomatoes, halved
- 1 large shallot, thinly sliced
- 1/2 cup fresh basil, julienned (thinly sliced)
- 1 cup feta, diced large
Dressing
- 4 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2–3 cloves garlic, finely minced
- 1 teaspoon kosher salt
- freshly ground black pepper to taste
Instructions
- In a large bowl combine the tomatoes, shallot and basil.
- In a small bowl or dressing shaker, mix together all of the dressing ingredients.
- Pour the dressing over the tomato mixture and mix well. Let marinate at room temperature for 30-60 minutes, or refrigerate for a few hours.
- Before serving, top with the feta cheese. Dig in!
