The Idea:
There I was, in need of a salad dressing, looking in my refrigerator for inspiration. I had buttermilk and dill leftover from other recipes, and I thought about making an easy version of a ranch dressing. But even though this quick buttermilk dill dressing has some of the same ingredients as a ranch dressing, it’s more like a vinaigrette, and it’s much more versatile.
At first I was only thinking about using it as a salad dressing, but what I discovered is that this dressing goes really well with lots of things. Salads of course, and it’s great as a dip for raw veggies, but I love it most of all with warm roasted veggies. Potatoes, asparagus, Brussels sprouts, sweet potatoes, you name it.
The Ingredients:
Since basic vinaigrette dressings are made of oil and vinegar (or another acidic ingredient), buttermilk’s natural acidity stands in for the usual vinegar or citrus juice. It also naturally thickens the dressing, and adds tartness and creaminess too!
Besides the fresh dill I also added garlic and salt to flavor the dressing. Dill and garlic are naturals with buttermilk!
The Preparation:
As for the preparation, if you’ve got 5 minutes, then you’ve got time to make this dressing! Chop the fresh dill and garlic, then measure everything into a jar and either shake or whisk until it’s combined.
The Payoff:
Now you’ve got to decide how to use the dressing! Try it on your favorite green salad, as a dip when you make a veggie tray, or as a sauce for roasted meats.
Remember how I was talking about serving some quick buttermilk dill dressing with roasted veggies? The perfect pairing is with some spicy harissa roasted potatoes. The cool, tart, herby dressing balances the spicy, peppery flavors in the harissa potatoes and makes a perfect, delicious bite!

Ingredients
- 3/4 cup buttermilk
- 3 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 3 tablespoons chopped fresh dill
- 1/2 teaspoon kosher salt
Instructions
- Measure all ingredients into a jar or dressing shaker.
- Shake or whisk until well blended and emulsified. Enjoy on salads, roasted veggies and anything spicy!
Notes
Options, any or all of the below:
- Add 1/4 teaspoon cayenne pepper
- Add 1 tablespoon minced shallot
- Add 1 teaspoon sugar
