Description
Roasted Garlic White Bean Dip is an easy, healthy snack that uses ingredients straight from your pantry. It’s a three ingredient appetizer with not only roasted garlic, but smoked paprika for a one-two punch of flavor. Serve with chips, crackers and sliced veggies and everyone’s happy!

- 2 14 oz cans of white beans, drained and rinsed. Great northern or cannelini beans both work well.
- 1 head of roasted garlic (click here for instructions)
- 1 1/2 – 2 teaspoons smoked paprika, to taste
- 1/4 cup extra virgin olive oil
- 2–4 tablespoons water, as necessary
- 1 teaspoon kosher salt
Instructions
- Preheat the oven to 350 degrees and roast the garlic (about 45 minutes). This can be done the day before. (click here for instructions)
- Place the beans in your food processor or blender.
- Squeeze the roasted garlic out of the peel on top of the beans. Add the smoked paprika, olive oil and salt and blend.
- If the dip isn’t as smooth as you would like, add water, 1 tablespoon at a time, and blend until the dip is just the way you like it.
Notes
Serve with tortilla chips, crackers, sliced carrots and/or cucumbers.
Options – Sprinkle with toasted pine nuts and/or chop Italian parsley or cilantro and sprinkle on top. You can add a few tablespoons of tahini too, if you want it to taste more like a traditional hummus. You can also substitute cannelini or garbanzo beans.
